Secret family recipe: a heap’n tablespoon (2 level tbspn) of ground coffee per 8 oz. H2O This should be about 12-14 grams of medium grind, adjust to taste.
Drip tips: for starters, clean all equipment thoroughly and keep in mind drip coffee is over 98% water. Garbage in, garbage out. Experiment with filtered or bottled water, many will note a difference.
Storage: Keep your whole beans in air tight container with as little air as possible and remember that when it comes to coffee, oxygen is the #1 enemy. Also avoid moisture and direct sunlight. Often the bag you get your coffee in is the best place to store it. By breaking down the bean there is much more surface area exposed to the enemy, so grind only what you will use right before you brew. Putting coffee in the freezer is like driving in reverse in hopes of lowering mileage on your car. It will make the coffee age a month over night. However it will preserve it there. So if you have more than you will use in a month it is o.k. Otherwise avoid it like the plague. And last but not least, putting it in the fridge does nothing.
Not all roasts are created equal: A very dark roast will go downhill quickly with in 10 days of being roasted. A light roast can maintain its density and oils with out becoming rancid (exiting oils exposed to “the enemy”) for over a month. After much feedback and roasting thousands of pounds one at a time, our one and only feature is a slow roasted medium roast. It allows the flavors to develop, natural sugars to caramelize, most of the oil to be retained and the water content to be slowly released through the natural pores. This yields a wonderful cup that is rich with bright fruity notes yet balanced enough to savor the smooth chocolate undertones. We think you will like it a lot.
